To get Darth maul complete yhe game with
Qui Gon Jinn then when picking him 
high-light Qui Gon Jinn and hold select 
until he changes into Darth Maul. To play
as Queen Amidala complete the game with 
Obi Wan Kenobi then again when picking her
high-light Obi Wan Kenobi and press select.
To play as Captain Panaka complete with Plo
Koon and do the same when you want to pick
him (press select remember). Im not sure who
you win with Adi Galeia but with Mace Windu
you win a new level (14 survibal challenge)
and you will get the Ultimate saber which 
enables one hit kills on every body except 
bosses.
